Breakfast today was vegetarian avocado toast. Vegetarian since it has no egg or meat. I know there are many avocado toast memes, but avocado toast is really delicious, if you love avocado, which I do. It starts with a slice of toast, I had sesame peasant from Common Good, a local bakery we love. Next, a slather of cream cheese. You could add fresh or dried herbs, garlic, fresh or powdered, and/or other spices if you wanted, but I kept it simple today. A generous amount of sliced avocado is layered on top of the cream cheese, followed by a rainbow of sliced cherry tomatoes. I don’t have enough ready from the garden yet, so I used some from my two pound mix from Costco. I actually bought them for savory tomato cobbler, a recipe I love from my SoNo Baking Company cookbook. but I might have enough in the garden tomorrow to replace what I used today. A little salt and hot sauce, if you like, and you have an amazingly yummy breakfast. If I ordered this at a restaurant, it would be $8, at least. $12 with an egg on top. I wish I’d made my own bread for this, but I’m working on it. My son is sending me some sourdough starter and I’ll be attempting sourdough bread in a few weeks. I’ll let you know how it goes. Heading to the Interlochen Farmers Market soon and then on to Hall’s, the sweet corn is ready! Some of the best sweet corn in the state. Hope they’re not sold out!
